Potatoes are a staple in many Indian kitchens because they are affordable, versatile and easy to cook. From simple aloo sabzi to crispy aloo parathas, the humble vegetable can be transformed into countless dishes. If you want to try something different from your everyday potato curry, Aloo Changezi is a flavourful option worth adding to your menu.
Popular in North Indian cuisine, Aloo Changezi combines potatoes with a rich, spiced gravy made using tomatoes, onions, yogurt and aromatic Indian spices. The result is a comforting dish with a creamy texture, a tangy flavour and a warming blend of seasonings. It can be served with naan, roti, paratha or steamed rice.
What Makes Aloo Changezi Special?
Aloo Changezi takes inspiration from the bold flavours associated with Changezi-style gravies. Instead of preparing potatoes in a thin, everyday curry, this recipe uses a thicker masala base that coats the potatoes and allows them to absorb the spices.
The gravy typically combines onion, tomato, ginger, garlic and powdered spices. Yogurt or cream may be added to create a richer texture, while dried fenugreek leaves and garam masala provide the finishing aroma.
The dish can be adjusted according to personal taste. Those who prefer a mild curry can reduce the chilli powder, while anyone who enjoys stronger flavours can increase the spices gradually.

Step-by-Step Aloo Changezi Recipe
Step 1: Prepare the potatoes
Wash, peel and cut the potatoes into medium-sized pieces. Boil them until they are just tender, taking care not to overcook them. Drain the water and allow the potatoes to dry slightly.
Heat oil in a pan and lightly fry the potatoes with salt, turmeric and a little red chilli powder. Cook until the pieces develop a light golden coating, then set them aside.
Step 2: Prepare the onion masala
Heat oil or ghee in a deep pan. Add cumin seeds and allow them to release their aroma. Add the chopped onions and cook until golden brown.
Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears. Add the tomatoes and cook until they soften and the mixture begins to thicken.
Step 3: Add the spices
Mix in coriander powder, cumin powder, turmeric and red chilli powder. Cook the masala over medium heat, stirring regularly to prevent it from sticking to the pan.
Allow the tomatoes to cook thoroughly so that the gravy develops a deeper flavour. If the mixture becomes too dry, add a small splash of water.
Step 4: Make the gravy creamy
Lower the heat and gradually add the whisked yogurt while stirring continuously. This helps prevent the yogurt from splitting. Cook for several minutes until the gravy becomes smooth and the oil begins to separate from the masala.
Add a little water to achieve your preferred consistency. For a richer version, stir in a small amount of cream.
Step 5: Add the potatoes
Put the lightly fried potatoes into the gravy and mix gently until every piece is coated. Cover and simmer for around 8–10 minutes, allowing the potatoes to absorb the flavours.
Add garam masala and crushed dried fenugreek leaves toward the end. Taste the gravy and adjust the salt or spice level if necessary.
Step 6: Garnish and serve
Turn off the heat and garnish with freshly chopped coriander. Serve the curry hot with roti, naan, paratha or rice.
Tips for Better Flavour
For the best results, avoid overboiling the potatoes before adding them to the gravy. Keeping the pieces intact helps them retain their texture during simmering.
Cook the onion and tomato masala thoroughly, since this forms the flavour base of the dish. Add yogurt on low heat and stir continuously to maintain a smooth gravy.
You can also adjust the consistency according to how you plan to serve the curry. A thicker gravy works well with naan and paratha, while a slightly thinner version pairs comfortably with rice.
A Delicious Alternative to Everyday Aloo Sabzi
Aloo Changezi offers a simple way to turn an everyday ingredient into a more elaborate meal. Its combination of tender potatoes, aromatic spices and creamy tomato-based gravy makes it suitable for family lunches, weekend dinners or special occasions.
The recipe does not require unusual ingredients or complicated cooking techniques. With a little patience while preparing the masala, ordinary potatoes can become a rich and satisfying North Indian-style curry.
